Easy Chicken Chili Recipe

Perfect for an easy weeknight dinner, this hearty chicken chili will be a fast favorite in your recipe box!

Ingredients
  

  • 1 lb chicken tenderloins
  • 14 oz corn 1 can, drained
  • 14 oz pinto beans 1 can, rinsed and drained
  • 14 oz white beans 1 can, rinsed and drained
  • 32 oz chicken broth
  • 16 oz green salsa
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp salt adjust as necessary, we prefer 1/2 tsp
  • 1/4 tsp pepper adjust as necessary, we prefer 1/2 tsp

Instructions
 

  • Combine all ingredients in a large pot (or Dutch oven) over medium-high heat.
  • Bring mixture to a boil. Reduce heat to medium-low and simmer for one hour, or until chicken is tender and cooked through.
  • Remove chicken and transfer to a cutting board. Shred chicken with two forks and return to pot.
  • Bring chili back to a simmer for additional 25minutes.
  • Ladle chicken chili into bowls. This easy chicken chili recipe is delicious on its own, but can be served over rice or with toppings.
